perfect pumpkin spice granola

How is it already practically November??!

I’m getting so so behind on my pumpkin t0-make list, but I’m trying to squeeze one quick recipe in before Halloween is over!

This granola is a healthier option to balance out the mass amounts of Halloween candy coming your way. I prefer granola lightly sweetened, so that it’s not as sugary as most of the store-bought granola.

In the mood for granola but sick of pumpkin everything?

Pumpkin Spice Granola

2 and 1/2 cups oats
1/2 cup walnuts or pecans
1/2 cup pepitas
1/2 cup shredded, unsweetened coconut

1/3 cup pumpkin puree
1/3 cup maple syrup or honey**
3 T melted coconut oil
1 tsp vanilla
1 and 1/2 tablespoon cinnamon
1 tablespoon pumpkin pie spice*
pinch of salt
1 T molasses (optional, but I love the depth of flavor it adds)

Preheat oven to 325. Prepare a large baking sheet with parchment paper or a Silpat.

In a large bowl, toss the first four ingredients together [oats, walnuts, pepitas, coconut].

In a medium bowl, combine the rest of the ingredients and stir until smooth [pumpkin, honey, oil, vanilla, spices, salt, molasses].

Pour the pumpkin mixture into the oat mixture, and stir until fully combined.

Evenly spread the granola mixture onto the baking sheet.

Bake for 25-35 minutes. Take the pan out and stir the granola every 10 minutes. If you prefer large clusters, just gently stir once at the halfway point.

*1/4 tablespoon each of cinnamon, ginger, nutmeg, and allspice

**may add extra sweetener to taste. or you could add a teaspoon or two of brown sugar, coconut sugar, etc.
