I think this is probably my most amazing healthy dessert creation EVER.
You will not believe how such healthy ingredients (and only a few!) combine into a completely indulgent chocolate mousse pie
This dessert is really simple, and definitely a double showstopper. The first is when you taste it, and then when you find out how healthy it is!
And if you want to make it even easier you can skip the crust and serve it as mousse cups!
But this chocolate crust tastes like chocolate cookie dough and is no bake sooo I wouldn’t miss it 🙂
Healthy Chocolate Mousse Pie (vegan, dairy-free)
Chocolate Cookie Dough Crust
1/2 cup almond flour
3/4 cup white whole wheat flour
3 tablespoons cocoa powder
1/8 teaspoon sea salt
2 tablespoons + 1 teaspoon agave
1/3 cup extra-virgin unrefined coconut oil, melted
up to 1/3 cup additional almond milk
Combine the flours, cocoa powder, and salt in a bowl. Add in the agave and melted coconut oil, and mix until combined. Add in almond milk until it comes together and resembles cookie dough. Press onto the bottom of your pan.
I used a 9 inch springform pan, just because I find them the easiest to slice afterwards! Feel free to sub maple syrup for agave, butter for coconut oil, or any other milk. To make it even easier, make or buy an Oreo crust!
12.3 oz package Mori-nu Firm Tofu (I used Lite)
3/4 cup unsweetened almond milk (other types of milk work, too)
1 tablespoon vanilla
1/8 tsp salt
2/3 cup to 1 cup chocolate, melted (I used Ghirardhelli 60% chocolate chips)
Blend tofu and almond milk in a food processor. Add vanilla and salt, and blend. Add in the melted chocolate (I let the chocolate cool a little bit so it doesn’t harden once it hits the mixture in food processor). Make sure it is chocolatey and sweet enough for your taste, depending on what kind of chocolate and how much you add.
Chill overnight in the fridge to make the pie easier to slice, or enjoy the mousse right away!
If you cut this into 8 very generous slices, each slice is only 141 calories!
