Healthy bite-sized hunks of peanut butter cookie dough studded with dark chocolate and super simple to make.
I love these as a high protein and high fiber snack. (Speaking of healthy snacks…) After chilling in the fridge, the texture is seriously just like cookie dough! The magic of coconut flour.
Healthy Peanut Butter Cookie Dough Bites
1/2 cup creamy natural peanut butter
1/4 cup honey
1/2 tsp vanilla extract
1/4 cup + 2 tbsp coconut flour
1/4 tsp sea salt
1/4 tsp cinnamon
1/8 cup chopped dark chocolate
In a large bowl, mix together peanut butter, honey, and vanilla until creamy and well blended. I find it helps to microwave for 30 seconds so it is runnier and easier to stir.
Add in the coconut flour, salt, and cinnamon. Mix well to combine. If it’s too wet, add a bit more coconut flour. If the dough is too dry and doesn’t hold together well, add in one teaspoon of almond milk. Fold in the chocolate.
Scoop out tablespoon-size portions and roll into balls. Makes about 18. Refrigerate truffles for 30 minutes before serving. Store in fridge!
