I know cake is the last thing on everyone’s minds right now. But after everyone’s over their green smoothie/kale/detox everything and need a little treat, this is an awesome option. Keep an eye out for more healthy treats coming your way!
Chocolate Chip Snack Cake
1 15.5 ounce can cannellini beans or white kidney beans, drained and rinsed
2 large eggs
1 teaspoon baking powder
2 teaspoons vanilla
2/3 cup coconut sugar or brown sugar
1/2 cup white whole wheat flour
1/4 tsp cinnamon
1/4 tsp salt
1/4 cup chopped dark chocolate or semi-sweet chocolate chips, plus extra for sprinkling on top
Preheat oven to 350 F. Spray an 8×8 inch cake pan or an 11×7 glass casserole with non-stick spray.
Blend everything except the chocolate chips in a high powered blender until smooth. Mix in 1/4 cup chocolate chunks. Pour batter into cake pan and sprinkle with extra chocolate. (If you’re trying to lighten it up, feel free to only sprinkle chocolate over the top)
Bake for 20-25 minutes until baked through. Let cool, slice into 16 pieces, and enjoy!
