I got this recipe from Beth’s blog, and she really hit it out of the park with this one!! I mean, it’s a GIANT CINNAMON ROLL that tastes like apple pie. What more could you want?

The only change I made was cutting down a little bit on the butter and using yogurt instead. Otherwise, I wouldn’t change a thing!

Giant Cinnamon Roll Apple Cake

small batch stove-top apple butter
2 large apples, peeled, cored, and chopped
½ cup apple juice or water
2 tbsp brown sugar
1/2 tsp cinnamon
1/4 tsp nutmeg

cinnamon filling
3 tbsp butter, melted
4 tbsp brown sugar
2 tsp cinnamon

apple butter cake
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/4 cup unsalted butter, softened
1/4 cup yogurt
2/3 cup granulated sugar
2 large eggs
1/2 cup milk
1 cup apple butter

vanilla glaze
2-3 tbsp milk
½ tsp vanilla extract
⅓ cup powdered sugar

Go to Bethcakes for the instructions! Yep, being lazy (I added the yogurt in with the eggs.)
