These are based off my three-ingredient banana pancakes! So good and good for you! All it takes is putting everything into a blender and onto a skillet 🙂

Healthy Pumpkin Spice Pancakes

1/2 cup pumpkin puree
2 eggs
1 tbsp oats
1 tsp cinnamon
1/2 tsp pumpkin pie spice
1/2 tsp vanilla
1 packet stevia (or 10-15 drops liquid stevia, or sweetener to taste)*
1 tsp baking powder
1/3 cup unsweetened almond milk

Throw everything in a high-powered blender and blend until smooth

Heat up skillet to medium, and cook pancakes! I like to make mini pancakes because they cook more evenly and are easier to flip.

*These require extra sweetener compared to the banana pancakes because bananas are a lot more naturally sweet than pumpkin!
