As promised…I added even more nutrition to the pancakes I made the other day.

I love adding in some vegetables to every meal, and when I’m craving something sweet for breakfast, I usually go for overnight oatmeal or a green smoothie. But when it gets a little too cold for an ice-cold smoothie (or let’s be real, when I just want pancakes), I think these are an awesome way to sneak in some greens! I know it sounds a little weird, but just give it a try!

Easy Three-Ingredient Green Banana Pancakes

1 ripe banana
2 eggs
Handful of spinach (I use frozen spinach for convenience, but fresh works too!)

Optional additions:
1 teaspoon baking powder *HIGHLY recommended. Makes them fluffier!
cinnamon to taste *I like cinnamon a LOT, so I use 1/2 teaspoon
pinch of salt
splash of vanilla
fruit, chocolate chips…your normal banana accoutrements 😉

Throw everything in a high-powered blender (This is necessary for the spinach to not be chunky and gross).

Heat up skillet to medium, and cook pancakes! I like to make mini pancakes because they cook more evenly and are easier to flip.
