I’m posting these today because they are quite possibly my favorite thing ever, and that’s the kind of thing you post on your BIRTHDAY (!!!)

They are like larabars on crack. Fudged up and raw and vegan and indulgently guilt-free.

I love these. So so so much.

Frosty Banana Fudge Bars (vegan, raw)

base:
overflowing 1 cup pitted Medjool dates
1 cup almonds, unsalted (can sub other kinds of nuts to your liking)
1/4 cup unsweetened cocoa powder
1 teaspoon vanilla
1/8 teaspoon salt

fudge:
2 ripe bananas
4 tbsp natural almond butter
1/4 cup unsweetened cocoa powder
4 tbsp raw unpasteurized honey (or agave works too)
1/8 teaspoon salt

In a food processor, process almonds until well chopped. Add dates, cocoa powder, vanilla, and salt until well blended.

Spread mixture in a 9×5 baking pan (or an 8×8 is okay, but bars will be thinner) until evenly distributed, and press down gently with a spoon.

In the food process, blend together bananas, almond butter, honey, cocoa powder, and salt until well blended. Spread mixture over bottom layer until evenly distributed. Place in freezer for 30 minutes or until solid. Slice and serve, or store in freezer.
