Wings are one of my boyfriend’s food groups, and although I can’t deny their deliciousness, I can’t get on board with its fried fatty calorie bomb.

I was highly skeptical indeed about cauliflower even coming anywhere close to resembling chicken wings.

I guess miracles do happen?

Try them, you won’t be disappointed.

Buffalo Cauliflower Bites
Inspired by Veg City Chick

1 cup oat flour (I put oatmeal in the food processor until finely ground)
1/2 to 1 cup water
2 tsp garlic powder
20 oz (6 1/2 cups) cauliflower florets
Frank’s Buffalo Sauce

Preheat the oven to 450°F. Lightly spray a large non-stick baking sheet with oil.

Combine the water, flour, and garlic powder in a bowl and stir until well combined.

Dredge the cauliflower pieces in the flour mixture and place on the baking sheet; bake for 20 minutes.

After 20 minutes, pour buffalo sauce over the baked cauliflower and continue baking for an additional 5 minutes. Serve with ranch dressing and celery sticks, if desired.
