raw vegan chocolate & peanut butter cups

I’ve been wanting to try making my own raw chocolate for a while, and I don’t know why I waited so long! With only 3 ingredients, it couldn’t be easier.

Of course, once I deemed the chocolate a delicious success, peanut butter cups were the natural progression.

Hello, cute little heart molds from IKEA. You’re supposed to be for ice cubes, but I don’t care! Although now that I think about it, some fruit-infused heart ice cubes would be adorable.

Raw Chocolate (Vegan)

1/4 cup extra virgin coconut oil
2/3 cup cocoa powder
4 tbsp honey/coconut nectar/maple syrup

Melt the coconut oil over a low heat and remove from the heat as soon as it’s melted.

Sift in the cacao powder and whisk until completely combined. Add in the sweetener of choice.

Drizzle it over fruit, pour it into molds or just spread it on a baking sheet and make bars. To get the chocolate to set, put it in the fridge for 10-15 min.

This chocolate gets melty pretty fast, so it should be stored in the fridge.

Peanut butter filling (or really anything you want to stuff inside of chocolate)

peanut butter
pinch of salt
liquid Stevia drops, to taste

If making peanut butter cups: use mini cupcake liners or a mold. Put down a layer of chocolate, chill until hardened. Add filling, then put more chocolate on top to cover it. Chill until hardened.
