This was my first time trying cashew-based ice cream. Definitely a good alternative for someone who can’t have traditional dairy ice cream!
It was pretty easy to make with my trusty food processor…just throw all the ingredients in and give it a whirl! I’d imagine a heavy duty Vitamix would make the job even easier.
Vegan Oreo Ice Cream Cupcakes
6 oreos for the crust
For the ice cream:
1/2 cup raw cashews, soaked in water for at least 2 hours
1/2 cup almond milk
1/8 cup melted coconut oil
2 tablespoons honey (feel free to sub agave or maple syrup for strict vegans)
1/2 tablespoon vanilla
Line a 6-cup cupcake pan with cupcake liners and place an Oreo on the bottom of each.
Blend all the ice cream ingredients together in a high speed blender or food processor until smooth
Pour the ice cream mixture on top of the Oreo. Freeze until set (at least 1 hour). Once they are set, feel free to add toppings (Oreo crumbs, drizzle chocolate, nuts, coconut, etc).
