healthy crockpot chili

When school takes every last second of my free time away from me, I still want something easy, delicious, and healthy to eat. This chili is my go-to recipe! Just throw everything in to the crockpot and cook on low for 6-8 hours. Makes a huge batch so you’ll be set all week.

  • 1 can black beans (low or no sodium)
  • 1 can red kidney beans (low or no sodium)
  • 1 can tomatoes, diced with green chilies/jalapenos/etc
  • 1 can tomatoes diced, no sodium added
  • 2 cans (8 oz each) tomato sauce, no sodium added
  • 4 cups chicken broth (low sodium)
  • 1 pound lean ground beef or turkey
  • 1/2 cup uncooked quinoa
  • tons of vegetables to fill up the crockpot! I like to use anything that’s in season that I can get for cheap (and fresh!) and whatever is in the fridge – eggplant, zucchini, onions, cauliflower, bell peppers, squash, carrots, celery
  • 1 chopped jalapeno pepper (remove or keep seeds depending on how spicy you like it)
  • 2-4 tablespoons chili powder, depending on how spicy you like it
  • salt & pepper to taste
