My friend asked for banana bread, so I took extreme artistic liberty by incorporating a classic banana bread base and spicing them up into these muffins! Total makeover.
There’s something about moist (sorry) and cinnamony banana bread that is so comforting. That is still there, except SO much better.
The cinnamon streusel is to DIE for. And even though banana bread usually has semisweet chocolate chips in it, the white chocolate drizzled on top is actually pure perfection. I don’t think banana bread has ever looked this good.
White Chocolate Drizzled Cinnamon Streusel Banana Bread Muffins
1 and 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 teaspoon vanilla
3 -4 ripe bananas, mashed
3/4 cup sugar
1 egg, lightly beaten
1/3 cup butter, melted
1/3 cup packed brown sugar
1/4 cup all-purpose flour
1/4 teaspoon ground cinnamon
2 tablespoons butter
white chocolate for drizzling
Preheat oven to 375 degrees F. Lightly grease 10 muffin cups or use liners.
Make streusel: In a small bowl, mix together brown sugar, flour and cinnamon. Cut in butter until mixture clumps together. Set aside.
Make muffin batter: In a medium bowl, mix together flour, baking soda, baking powder, cinnamon, and salt. In another bowl, beat together bananas, sugar, vanilla, egg, and melted butter.
Stir the wet mixture into the dry mixture just until moistened. Spoon batter into prepared muffin cups. Sprinkle streusel over muffins.
Bake in preheated oven for 18 to 22 minutes, until a toothpick inserted into center of a muffin comes out clean.
Melt white chocolate in the microwave in 30 second increments. Drizzle chocolate on top.
