Sorry, but I am still not over pumpkin.
I love it all year round, and I don’t care if I’m so out of season by posting this. Especially since everyone’s probably on a healthy food spree, and pumpkin is one of my favorite ways to make a recipe better for you!
These bars taste like normal pumpkin bars covered with cream cheese frosting and sprinkled with cinnamon…but they are so much better for you than it seems (check out the nutritional info at the bottom).
So you can feel free to have one…

Pumpkin Spice Bars
1 and 1/2 cups white whole wheat flour
1/2 cup almond flour
2 tbsp cinnamon
1 tbsp pumpkin spice
1 tbsp baking soda
1/2 tsp baking powder
1/2 cup (4 oz cup) unsweetened applesauce
1 tsp olive oil
2 cups pumpkin puree
3 tbsp brown sugar
1 tbsp vanilla
1/8 cup agave
Additional sweetener to taste — I used 2 packets Stevia
Preheat oven to 350 degrees.
Sift together the dry ingredients.
In a separate bowl, mix together the eggs, applesauce, and oil. Add agave, pumpkin, brown sugar, and vanilla to the wet ingredients.
Add the wet ingredients to the dry ingredients and mix until completely smooth.
After the mixture is combined, add additional sweetener to taste. I used 2 packets of Stevia.
Grease one 13×9 or two 8×8 pans with olive oil, butter, or cooking spray. (I used a 9-inch round and a 9×9 pan because it’s all I had on hand)
Spread batter in the pans and bake in the oven for about 20-30 minutes. Start checking at 20 minutes with a toothpick.
While the bars are baking, make the frosting. Allow the pumpkin bars to cool before you add any frosting.
Vanilla Greek Yogurt Cream Cheese Frosting
6 oz vanilla Greek yogurt
8 oz (1 cup) 1/3 less fat cream cheese
1 tbsp vanilla
3 tbsp agave
2 packets Stevia
Mix together and spread on top of cooled pumpkin bars. Sprinkle with cinnamon!
